I merged 2 recipes together and came up with the best fried chicken ever. My Grandmother Jacobs taught me to fry chicken, her special and must have ingredient was Crisco. I have tried it many other ways and couldn't get it to work. My recent Paula Deen magazine has several recipes that are breaded with Panko bread crumbs - japanese bread crumbs. So, here is the recipe and hope it turns out as good for you as it did me.
Thin Chicken Breasts 1 Box of Progresso Panko bread crumbs - plain Sesame Seeds (optional) eggs beaten and a splash of milk mix panko and sesame seeds in a bowl
- trim the chicken of all grissle, make sure the chicken is cold
- coat the chicken in all purpose flour
- dip the chicken in egg and milk mixture
- roll the chicken in panko and sesame seed mixture
- 2 tablespoons of olive oil and 1/2 stick of real butter - heat in a skillet
- place the chicken in the hot skillet
- brown on both sides and lower heat
- cover skillet with a lid and cook for approximately 20 minutes
